Smoked sausage key to shop's love (con't)

The shop is renowned for its smoked sausage.

“We’ve been told constantly that it’s the best around,” Steve says.

The shop also sells fresh sausage, shish kebobs and burger patties. And it carries frozen meats and vegetables.

CCS buys its pork from Weston Abattoir in Maidstone, and chicken from Barron Poultry in Amherstburg.

Its beef comes from Norwich Packers near Brantford.

The store’s meats can also be found at a couple of retailers.

“Teddy Farron (Ted Farron’s Gourmet Butcher Shop) certainly sells a little bit of our smoked sausage,” John says. As does Mark’s Fine Foods in St. Clair Beach.

The Ivaniskos have seamlessly remained in business by making sure they keep up to date with changing regulations.

Other butcher shops have had to close because they couldn’t meet new standards, which some butchers say are onerous and punish an industry that has long had a good record preparing sausage.

“Yes, we’ve lined our smoke house and everything to become compliant,” John says. “It’s an ongoing process.

"They (government) never quit. So you just have to keep on doing what they ask you to do.”
